The Peri Peri Scale: Seven Levels of Heat

Every grilled chicken order gets basted on the grill with one of seven sauces. Three have no heat at all, one is a gentle warm-up, and three bring real peri peri fire. This page tells you what each one tastes like so you order right the first time.

Same scale at both locations. Pick one when you order grilled chicken, wings, or platters. The fried line is hot or mild.

Lemon & Herb

No heat · Extra mild

Bright, citrusy, herby. The one for kids, first-timers, and anyone who wants the flame-grilled chicken without any chili. Pure flavor.

Mango Passion

No heat · Extra mild

Sweet and tropical with a little tang. Mango and passion fruit over the char. Popular on wings and with kids.

Garlic & Herb

No heat

Savory, aromatic, garlic-forward. No chili heat, big flavor. The most ordered of the no-heat levels.

Jerk BBQ

Mild warmth

Smoky, sweet, Caribbean-spiced. A gentle warmth that builds slowly but never burns. Great on wings and the half chicken.

Mild

Gentle heat

The real peri peri flavor with the heat turned down. Tangy African Bird's Eye chili you can taste without sweating. Our most popular level.

Hot

Real heat

Full peri peri. Bird's Eye chili, garlic, lemon, and a heat that stays with you through the meal. For people who order hot everywhere.

Extra Hot

Maximum flame

For serious chili lovers only. Everything in Hot, turned all the way up. Ask for extra sauce on the side if you dare.

How the scale works

The sauce goes on while it cooks, not after

Most places pour sauce over cooked chicken. We baste. While your chicken is over the open flame, it gets brushed with the level you picked, so the sauce caramelizes into the skin and becomes part of the cooking. That's why Lemon & Herb tastes like something and not like plain chicken, and why Extra Hot gets into the meat instead of sitting on top.

Not sure where to start? Mild is the most popular level and the best introduction to real peri peri flavor. If you want the taste without the heat, go Garlic & Herb. If you want to sweat, Hot. Extra Hot is for people who order ghost pepper on purpose. You can also ask for a side of any sauce to try before you commit.

What are the seven peri peri heat levels?

From mildest to hottest: Lemon & Herb, Mango Passion, Garlic & Herb (all no heat), Jerk BBQ (mild warmth), Mild, Hot, and Extra Hot.

Which level should I order if I don't like spicy food?

Lemon & Herb, Mango Passion, or Garlic & Herb. All three have no chili heat. Garlic & Herb is the most savory; Mango Passion is sweet; Lemon & Herb is bright and citrusy.

Which is the most popular level?

Mild. It has the full peri peri flavor with the heat turned down, which makes it the easiest introduction to real peri peri chicken.

How hot is Extra Hot?

It's our maximum. Everything in Hot, turned all the way up with more African Bird's Eye chili. Order it if you regularly order the hottest option at other restaurants.

Is the peri peri sauce put on before or after cooking?

During. The chicken is marinated overnight, then basted with your chosen sauce while it grills over open flame, so the sauce cooks into the skin.

Can I try a sauce before ordering?

Yes. Ask for a side of any peri sauce (mild, medium, or hot), peri mayo, Very Peri Secret sauce, ranch, or marinara.

Do the heat levels apply to fried chicken and burgers?

Fried chicken sandwich and tenders come hot or mild. Smash burgers come with house burger sauce (hot or mild). The full seven-level scale is for flame-grilled chicken, wings, platters, and the grilled chicken sandwich and wrap.

Is the scale the same at Brooklyn and Bethpage?
